With medium structure and with a never invasive acidity, Pinot Blanc conquers for its elegance and delicacy.
Molti Salorno – south of Bolzano – is home of the Von Blumen winery, founded by the Fugatti family in 2013. The vineyards, facing West, are located on steep terraced slopes between 500 and 1000 meters above sea level, and sink the roots in soils of calcareous-porphyritic origin.
Pinot Bianco Riserva – together with Sauvignon Riserva and Pinot Noir Riserva – is part of the Flowers line, the name chosen to represent the maximum selections of the Von Blumen project.
Flowers wines are produced only in certain years, with grapes coming from small and selected parcels of land and, in the cellar, they follow a specific and prolonged maturation and refinement.
The Pinot Bianco Flowers Riserva 2020 carries out alcoholic fermentation in steel, subsequently matures for 10 months in tonneaux (large 500 hectoliter wooden barrels) and, depending on the vintage, carries out partial or total malolactic fermentation. It refines in the bottle for a further 12 months before being put on the market.
Before moving on to the tasting notes, I would dedicate some words to malolactic fermentation.
Lactic fermentation, also called malolactic – is a phase distinct from alcoholic fermentation and consequent to it – less frequent in white wines than in red wines and is carried out by the winemaker with the aim of reducing the acidity of the wine.
During malolactic fermentation, malic acid (stronger and more unripe) is transformed into lactic acid (softer and more delicate), this biological transformation gives the wines greater balance, roundness, intense and fine aromas that turn towards spices and buttery notes.
The Pinot Bianco Flowers Riserva 2020 has a straw yellow color with golden reflections. Intense and juicy, it recalls sensations of white peach, chamomile, pastry and vanilla pods. The sip is enveloping, medium structured and pleasantly fresh.
A gastronomic Pinot Blanc with the right characteristics to pair with fish and shellfish dishes, but also omelets and white meat main courses.
